In the eighteenth century, the dining room of hotels offered a long table for serving in the french style table d’hôte for all guests to have lunch or supper together. Later, the tables were separated to suit each individual group with the spread of the Gebrüder Thonet bentwood chair. Until the First world war, luxury Italian grand hotel names were in French and offered French cuisine. During the Fascist era, the hotels were renamed in Italian and began to offer Italian cuisine, and their signs often called «Albergo Ristorante ...». In addition, the easy portability of bentwood chairs made the dining place in hotels extend to the open-air space on terraces that better matches Italian cuisine.
